I know what you’re thinking….Chipotle? and Peach? In a pie pop?? Are you mad, woman???? Ok, so maybe you didn’t think that last part but I wouldn’t blame you if you did. It’s a bit out there for some or it’s just right for all you risk takers out there who like to wake your taste buds up a little.
The chipotle gives these cute pie pops a subtle smoky flavor that sets off the peach perfectly. I told Stephen what flavor they were and got the raised eyebrows and wrinkled nose that I was expecting. So, if your loved ones are suspicious of the whole thing you can always omit the chipotle chili powder. I won’t think poorly of you!
Get started now:
Chipotle Peach Pie Pops
Makes 10
Pie Dough:
-7 oz flour
-1/2 oz granulated sugar, plus extra for sprinkling on the tops of the pies
-1/4 tsp salt
-3.75 oz cold butter, diced
-2 oz ice cold water
Peach Filling:
-5 oz finely diced yellow peaches
-2 Tbsp brown sugar
-1 Tbsp granulated sugar
-2 tsp flour
-1/8 tsp chipotle chili powder
-1 egg
Pie Dough:
1.) Mix the flour, salt and sugar together.
2.) With your hands or a pastry blender, cut the cold butter into the dry ingredients until it is crumbly.
3.) Pour the cold water in and mix just until a dough forms. Do not over mix. Chill in the fridge for at least 30 minutes
Peach Filling and Assembly:
1.) Mix all of the filling ingredients together except the egg, set aside.
2.) Roll the pie dough to 1/16″ thick, cut twenty small circles out of the dough
3.) Whisk the egg until smooth, brush the outer edge of 10 of the pie dough circles with egg.
4.) Spoon a tsp of filling into the center of the pie dough circles with the egg.
5.) Place a lollipop stick in the center of the filling and press it gently into the dough.
6.) Gently stretch the other 10 circles and place them on top of the circles that have the filling. Pressing down on the edges to stick them to the egg. Press the tines of a fork along the outer edge to firmly adhere the two dough circles together
7.) Cut 4 vents with a sharp knife in the top of the pie dough circle. Brush the entire top with more egg and sprinkle with granulated sugar
8.) Bake on a parchment lined pan at 350 degrees F until golden brown, approximately 20-25 minutes
Note: You will see in my picture of the unbaked pie pops that I made some with little star cut outs. I ended up not loving them after they baked because the star stretched out too much. You can probably get away with a simpler shape pretty easily. Maybe a heart or diamond…..or maybe I’m just an OCD perfectionist and really they’re fine!
